      How can I add information like store URL and user avatar URL to the GET Vendors API endpoint

      Hello,
      You can use this filter
      apply_filters( "wcfmapi_rest_prepare_store_vendors_objects", $response, $request ); to add any data to the rest api route of the vendor api.
